BUTTERBEER!

Oh, P.S. I thought you might like to know the recipe for Butterbeer.
Yes, when I returned home from The Wizarding World of Harry Potter,
I experimented on every recipe I saw online and this one is the best.


They only serve it cold at the park, but I have found that it actually tastes
really good hot, too. So...you pick.

PPP Recipe - Black Bean Burgers with Cilantro-Lime Mayo

Yes, it's your lucky day. You get a recipe for breakfast AND another one for lunch! You're all set, cause if you go here you kind find another one for dinner :) I recommend the fajitas. MAN, I'm hungry.

Ok, so...this recipe is SO good and is perfect for those of you who are vegetarians. For those of you who aren't, you won't even miss your meat, this recipe is SO hearty and mouth-watering. YUM! Enjoy!



Black Bean Burgers with Cilantro-Lime Mayo
(from the kitchen of Cookin' Canuck)

Burgers:
  • 4 pieces day-old or toasted whole-wheat sandwich bread
  • 2 tbsp olive or canola oil, divided
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp minced jalapeno pepper, membranes and seeds removed 
  • 1 tsp ground cumin
  • 1 (15 oz.) can black beans, drained and rinsed
  • 1 1/4 cups cooked brown rice
  • 2 tsp fresh lime juice
  • 1/2 tsp kosher salt
  • 1/2 tsp freshly ground black pepper
  • 1/4 cup chopped cilantro


Cilantro-Lime Mayo:
  • 1/2 cup mayonnaise
  • 2 tsp fresh limejuice
  • 2 tbsp finely chopped cilantro
  • 1/2 tsp ground cumin
  • 1/4 tsp freshly ground black pepper



Serve with:
  • 4 whole-wheat buns
  • 1/2 cup cotija cheese (I used Swiss, it was delicious)
  • 4 large slices tomato
  • 12 slices avocado


Burgers:
  • In the bowl of a food processor, pulse sandwich bread to form breadcrumbs.  Pour into a bowl and set aside.
  • Heat 1 tablespoon olive or canola oil in a large skillet set over medium heat.  Add onion and sauté until soft.  Add garlic, jalapeno, and cumin.  Saute for additional 2 minutes.  
  • Scrape the mixture into the food processor.  Add black beans, brown rice, limejuice, salt, and pepper.  Pulse until the beans are chopped, but not pureed.  Scrape the black bean mixture into a large bowl.  Add half of the breadcrumbs and the chopped cilantro.  Using a wooden spoon, stir the mixture until combined.
  • Divide the mixture into 4 equal portions and form into patties. If the mixture is too moist to form patties, add more breadcrumbs.  Place the patties on a baking sheet lined with plastic wrap and cover with additional plastic wrap.  Refrigerate for at least 1/2 hour.
  • Heat 1 tablespoon canola oil in a large skillet (preferably not nonstick, so a good crust can form) set over medium heat.  Add the burgers and cook for 4 minutes per side.

Cilantro-Lime Mayo:
  • In a small bowl, combine mayonnaise, limejuice, cumin, cilantro, and pepper.  Stir well.
  •  Lightly toast the whole-wheat buns.  Spread 2 tablespoons cilantro-lime mayo on each bun, and top each with a black bean patty, 2 tablespoons crumbled cotija cheese, 1 slice tomato, and 3 slices avocado.  Serve.

PPP Recipe - Pumpkin Waffles

Thanks to my sister Kim for this DE-LICIOUS recipe! YUM! SO simple, tasty and HEALTHY...for waffles anyway :) Enjoy!


Pumpkin Waffles
(from the kitchen of Kim Rowley)
 Ingredients:
  • 2 cups Whole grain flour (wheat or oat or a mixture)
  • ¼ cup agave, or 100% pure maple syrup,
  • 1 Tablespoon baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon sea salt
  • 2 eggs or egg substitute
  • 1½ cups milk, or almond milk
  • ¼ cup coconut oil, melted
  • ½ cup pumpkin (I add about ½ of a can, because I like more pumpkin taste)

 Instructions:
  • Plug in the waffle iron to preheat it.
  • In a medium-size mixing bowl, stir together the flour, sugar, baking powder, cinnamon and salt.
  • In a separate mixing bowl whisk together the eggs, milk, melted coconut oil, and pumpkin. Pour the wet ingredients over the flour mixture and stir just until combined.
  • Coat the preheated waffle iron with cooking spray.
  • Pour the waffle batter onto the center of each section of the iron (You will need 1/4 to 3/4 cup of batter for each waffle).
  • Cook the waffles for about 4 to 5 minutes or until they are crispy and light brown.
  • Serve immediately.
**Serves 4

Simple yummy syrup & topping ideas:
  • Blend your favorite berries or peaches with agave in the blender and pour over waffles.
  • Pure Maple syrup
  • Slice up fruit like berries, peaches, or bananas serve with agave sweetened yogurt

PPP Recipe - Sweet Potato & Black Bean Enchiladas

Presenting:

Sweet Potato & Black Bean Enchiladas!

Yep! This is the AMAZING recipe I was telling you about. My sister-in-law, Sara, made it for our family one night and I nearly died. It is such a good blend of flavors that you don't even miss the meat, cheese and whatever else you put on your "usual" enchiladas. YUM! yum. Enjoy!

Sorry the pictures are "meh"...the lighting in my kitchen is "meh" in the evening so...
 






2 large sweet potatoes
1 T olive oil
1 T minced garlic
1 small jalapeno minced (seeded)
1 can rinsed black beans
1 can diced tomatoes
1 T chili powder
Salt and pepper to taste
2 cups of your favorite salsa
8 large flour tortillas

Peel your sweet potatoes and dice into chunks, spread out on a baking sheet with a little olive oil and salt, bake at 400 until soft

saute your garlic and jalapeno in the olive oil, add black beans, tomatoes, chili powder, and sweet potatoes.  Mix everything really well and let cook for a few minutes.

Spread 1 to 1 and 1/2 cups of salsa on the bottom of a casserole pan. Fill tortillas with the bean and sweet potato mixture, roll tightly, and place in pan. When finished top with remaining salsa and filling. (I was always make sure to have some let over for this)  You can also top with cheese if you would like. Bake at 350 for 20 minutes.

I like to serve them with lettuce, avocado, and a little sour cream.

PPP Recipe - Fried Tilapia Fillets & Strawberry Spinach Salad

Time for another PPP Recipe! We have this lovely dish at my house on a regular basis and it never disappoints, so. Without further adieu, I present:
Fried Tilapia Fillets with Lemon, Wild Rice & Strawberry Spinach Salad


Fried Tilapia Fillets with Lemon
(I know you're thinking, "FRIED?! HEALTHY?!" but 4 tablespoons of Olive Oil to 4 fillets is only one tablespoon per person. Not too shabby!)

4 Tbsp olive oil
1-2 lemons (for zest & juice)
4 Tilapia fillets
2 Tbsp butter (or Butter Buds, flavor sans the fat)
4 Tbsp flour
2 Tbsp finely chopped parsley
4 sprigs of parsley
Salt
Pepper

Zest one of the lemons with a fine grater (we use a Microplane Zester, they are FAB). Then cut 4 slices of lemon for a garnish & squeeze the rest to add at the end of the cooking process with the parsley & butter. Rinse each fillet with cold water & then pat dry with a paper towel. Then lay them on a plate & sprinkle flour & salt & pepper over one side of each of them. Distribute half of the lemon zest over one side of the fillets. Heat olive oil in a large frying pan on stovetop. Fry the fillets on one side until lightly browned. Turn over, sprinkle the second sides of the fillets with more flour, salt & pepper and the rest of the lemon zest. Continue frying until done to an internal temperature of 145°. Add the lemon juice, the butter & finely chopped parsley. Arrange the fillets on a serving plate & garnish with the lemon slices and sprigs of parsley.
Strawberry Spinach Salad
All you need is spinach, sliced strawberries, sliced toasted almonds and Brianna's Poppy Seed Dressing. Just toss it together and POW you have a delicious, crisp, fresh salad. The picture shows that we had candied pecans instead of almonds and added blueberries, but I like it a lot more the other way. So, there are two options.

PPP Recipe - Polynesian Chicken



Madre made this scrumptious meal last night for dinner and I had to share. It is loaded with nutrients and it tastes delicious! Thanks, cousin Heidi, for sharing this recipe!

{We had it with broccoli, cauliflower, asparagus, and wild rice. Delicious combo}

Title: Polynesian Chicken

Description:
This was one of our family's favorites growing up. We like to double the sauce.

Ingredients:
6 boneless chicken breasts
Flour with a little salt to coat chicken
Green pepper—cut into chunks
Mandarin oranges--drained
Sesame Seeds
Pineapple chunks--drained

½ c. orange juice
1 T. lemon juice
¼ c. brown sugar
2 t. corn starch
1 T. soy sauce


Directions:
Coat chicken in flour/salt mixture and place in a greased baking dish. Bake at 350° for 40 minutes. In a saucepan combine brown sugar and corn starch, then add orange juice, lemon juice, & soy sauce. Stir and bring to a boil and cook until sauce thickens. Arrange pineapple, peppers & oranges over cooked chicken. Pour sauce over top & sprinkle with sesame seeds. Put back in oven for 5-10 more minutes.

Number Of Servings: 6




My nephew ate all of his! That's gotta count for something.




After dinner we went to Yogurt Stop for dessert! All of their frozen yogurt is low-fat and non-fat AND tastes delicious! Frozen yogurt is a nutritious alternative to ice cream and/or frozen custard, if you ever have that craving that you just can't get rid of without indulging (like me)!

My favorite combo is:
Fat-Free Cheesecake Frozen Yogurt + Organic Granola + Fresh Raspberries = YUM-alicious!




And again, the kids LOVE it!
